Sweet potatoes are a staple in my diet. Not only are they delicious, they are chock-full of health benefits.
These puppies are a great source of vitamin C, B6 and D. They also aid in the body's natural production of collagen to promote healthy skin elasticity.
I always have some potatoes roasted and ready to go in my fridge, as they're the foundation of a lot of my meal prep for the week.
I will put these in a salad, serve as a side dish or as an on the go snack.
Here is how I prepare mine:
- Coconut oil
- Chopped fresh Thyme
- Chopped fresh Rosemary
- Chopped fresh Parsley
- Salt & Pepper
Cut sweet potatoes in quarters so they are in equal sized cubes.
Once potatoes are cut, drizzle with coconut oil and toss until all are coated in oil.
Next, combine all finely chopped herbs together.
Sprinkle the herbs top of oil coated potatoes and toss again. one all of the potatoes are covered, add some salt and pepper.
Pour the covered potatoes onto a baking sheet and bake at 360 degrees for 35 minutes.
