Pitlick was selected by the Edmonton Oilers in the second round (No. 31) of the 2010 NHL Draft. He spent six seasons with the organization, including three stints in Edmonton, before signing a three-year contract with the Dallas Stars on July 1, 2017.
Pitlick spent one season at Minnesota State University (2009-10) and one season with Medicine Hat of the Western Hockey League (2010-11).

Pitlick had 14 points (11 goals, three assists) in 58 games in three seasons with the Oilers but made the most of regular ice time with the Stars in 2017-18 when he scored 27 points (14 goals, 13 assists) in 80 games.
On June 24, 2019, Pitlick was traded by the Stars to the Philadelphia Flyers for forward Ryan Hartman.
