Jost chose the collegiate route to help create a path to the NHL. Though Jost was selected by Everett with the No. 7 pick of the 2013 WHL Bantam Draft, he turned down a career in major junior hockey to play with Okanagan of British Columbia Major Midget League to retain his NCAA eligibility. He had 88 points (44 goals, 44 assists) in 36 games as alternate captain in 2013-14 to help Okanagan win the BCMML championship.
Before 2015-16, his second full season with Penticton of the British Columbia Hockey League, Jost committed to the University of North Dakota for 2016-17. He was selected by the Colorado Avalanche with the No. 10 pick of the 2016 NHL Draft.

Jost finished his freshman season with 35 points (16 goals, 19 assists) in 33 games -- finishing second on North Dakota in points and assists, and tied for second in goals -- but not before captaining Canada at the 2016 IIHF Under-18 World Championship, where his 15 points (six goals, nine assists) in seven games broke Connor McDavid's Canadian record of 14 set in 2013.
Jost ended his collegiate career by agreeing to a three-year, entry-level contract with the Avalanche on March 29, 2017, becoming the first North Dakota freshman to go directly to the League since Ed Belfour in 1987. He made his NHL debut two days later at home against the St. Louis Blues and scored his first NHL goal on April 6, 2017, against the Minnesota Wild in Colorado's final home game of 2016-17.
Jost became an NHL regular the following season. He scored three goals in 12 Stanley Cup Playoff games in 2019, helping Colorado advance to the second round for the first time since 2008.
