Sorensen was selected by the Ottawa Senators in the fourth round (No. 106) of the 2010 NHL Draft after he had 17 points (seven goals, 10 assists) in 27 games for Sodertalje Jr. in Sweden.
Sorensen stayed in Sweden for the next six seasons, playing his final three with Djurgarden in the Swedish Hockey League. He won the SHL Rookie of the Year award in 2015 after he had 32 points (17 goals, 15 assists) in 50 games. In 2015-16, he had 34 points (15 goals, 19 assists) in 47 games.

On May 13, 2016, the San Jose Sharks signed Sorensen to an entry-level contract.
Sorensen began his first season in North America with San Jose of the American Hockey League and had 34 points (17 goals, 17 assists) in 43 games. He made his NHL debut and had an assist in a 5-4 overtime loss to the Buffalo Sabres on Feb 7, 2017. Sorensen scored his first NHL goal, the game-winner, in a 3-1 victory against the Vancouver Canucks on March 2, 2017 and finished the 2016-17 season with four points (one goal, three assists) in 19 games.
The Sharks re-signed him to a two-year contract on July 18, 2017 and he had seven points (five goals, two assists) in 32 games in 2017-18. Sorensen became a regular in 2018-19 and finished with 30 points (17 goals, 13 assists) and a plus-10 rating in 80 games. He signed a two-year contract with San Jose on Jan. 14, 2019.
