After being selected by the Buffalo Sabres in the sixth round (No. 163) of the 2012 NHL Draft, Ullmark spent the following three seasons with Modo in the Swedish Hockey League before coming over the North America.
In 2015-16, Ullmark split the season between Buffalo and Rochester of the American Hockey League. In 20 NHL games, Ullmark was 8-10-2 with a 2.60 goals-against average and .913 save percentage.

Despite his strong numbers, Ullmark spent the majority of the following two seasons in Rochester, playing in only six NHL games (four starts).
In 2018-19, Ullmark stuck with Buffalo, where he was supposed to be the backup for Carter Hutton, who had signed a three-year contract with the Sabres in the offseason. However, with Hutton struggling to find his consistency, Ullmark would go on to split time in net, playing 37 games (34 starts) with a 15-14-5 record, a 3.11 GAA and .905 save percentage.
Ullmark continued his strong play in 2019-20, and he took the No. 1 job away from Hutton by going 17-14-3 with a 2.69 GAA and .915 save percentage in 34 starts before the season was paused on March 12 due to concerns surrounding the coronavirus.
After six seasons with the Sabres, Ullmark signed a four-year contract with the Boston Bruins on July 28, 2021. He scored into an empty net with 48 seconds left in a 3-1 win against the Vancouver Canucks at Rogers Arena on Feb. 25, 2023. Ullmark became the 13th goalie to score a goal in the NHL in the regular season, the eighth to do so by shooting the puck into the net and the first since Pekka Rinne of the Nashville Predators did it at the Chicago Blackhawks on Jan. 9, 2020.
Ullmark became the second goalie in Bruins history with a 40-win season, joining Pete Peeters (40-12-9 in 1982-83), with 19 saves to defeat the Washington Capitals 5-2 on April 11, 2023. He was named a Vezina Trophy finalist for the first time after going 40-6-1 and leading the NHL in GAA (1.89) and save percentage (.938) in 49 games (48 starts) to help the Bruins set NHL records with 65 wins and 135 points.
