Labanc was born in New York and played amateur junior hockey in New Jersey, including in the Atlantic Junior Hockey League and the Metropolitan Junior Hockey League, before moving to the U.S. National Team Development Program from 2011-13.
In 2013-14, Labanc played for Barrie in the Ontario Hockey League and had 35 points (11 goals, 24 assists) in 65 games before he was selected by the San Jose Sharks in the sixth round (No. 171) of the 2014 NHL Draft.

In his second season with Barrie, Labanc had an offensive outburst, finishing with 107 points (31 goals, 76 assists) in 68 games. He followed that in 2015-16 with 127 points (39 goals, 88 assists) in 65 games, winning the Leo Lalonde Trophy as the top overage player in the OHL, the Jim Mahon Trophy as the top scoring right wing and the Eddie Powers Trophy as the top regular-season scorer.
Labanc signed an entry-level contract with the Sharks on March 9, 2016.
In 2016-17, he split time between San Jose of the American Hockey League and the Sharks. Labanc had 19 points (six goals, 13 assists) in 19 AHL games and 20 points (eight goals, 12 assists) in 55 NHL games. He made his NHL debut in a 3-0 win against the Washington Capitals on Nov. 8, 2016 and scored his first goal four games later in a 3-2 loss to the St. Louis Blues on Nov. 17.
In 2017-18, Labanc had 40 points (11 goals, 29 assists) in 77 games. On Dec. 21, 2017, he had four points (one goal, three assists), including scoring the game-winner, in a 5-4 overtime win against the Vancouver Canucks.
He improved his offensive numbers again in 2018-19, finishing with 56 points (17 goals, 39 assists) in 82 games. Labanc also became the first player in NHL history to have four points in one period of a Game 7 when he scored one goal and assisted on three others in a 4:01 span of the third period against the Vegas Golden Knights in the Western Conference First Round, helping the Sharks rally from three goals down in the third period for a 5-4 overtime win.
