He scored eight goals and 42 points in 63 games as a WHL rookie in 2010-11, leading Brandon's defense in scoring. Those numbers went up to 19 goals, 60 points and plus-33 in 2011-12, when Pulock was named to the WHL First All-Star Team for the Eastern Conference. Pulock scored 14 goals and 54 points in 61 games in 2012-13, then ended his junior hockey career with 23 goals and 63 points in 2013-14. He won All-Star honors each of his last three seasons.

Pulock joined Bridgeport of the American Hockey League after Brandon was eliminated from the 2014 WHL playoffs and played the final three regular-season games. He played all of the 2014-15 season with Bridgeport and scored 17 goals (13 on the power play) and 29 points despite missing nearly two months because of an injury that limited him to 54 games. He was named to the AHL All-Star Game.
Pulock made his NHL debut against the Edmonton Oilers on Feb. 28, 2016. He scored his first NHL point, a goal, against the Nashville Predators on March 17, 2016. He scored his first Stanley Cup Playoff goal against the Florida Panthers in Game 3 of their Eastern Conference First Round and finished the postseason with one goal and three points in six games.
He played almost all of the 2016-17 season in the AHL but became a full-time NHL player in 2017-18, when he scored 32 points (10 goals, 22 assists) in 68 games.
Pulock emerged as a top defenseman alongside Adam Pelech in 2018-19, when he scored 37 points (nine goals, 28 assists) in 82 games and helped New York reach the second round of the playoffs.
He had 35 points (10 goals, 25 assists) in 68 games when the 2019-20 season was paused March 12 due to concerns surrounding the coronavirus.
