A native of Ornskoldsvik, Sweden, Olofsson played four seasons in the Swedish Hockey League after he was drafted by the Sabres in the seventh round (No. 181) of the 2014 NHL Draft, including with Frolunda HC in 2017-18, when he scored 27 goals in 50 games.
He arrived in North America the following season and played the majority with Rochester of the American Hockey League, where he led the team in goals (30), assists (33) and points (63) in 66 games.

That earned him a late-season promotion, and on March 28, 2019, Olofsson made his NHL debut against the Detroit Red Wings. Two days later, he scored his first NHL goal against the New York Islanders.
Olofsson finished the season with two goals, each coming on the power play, and two assists in six games.
He made the Sabres out of training camp the following season and scored his first six goals on the power play to set an NHL record for most consecutive goals scored on the man-advantage to begin a career (eight).
Olofsson finished with 42 points (20 goals, 22 assists) in 54 games before the 2019-20 season was paused March 12 due to concerns surrounding the coronavirus.
