Recognized for his upbeat spirit and charming demeanor, Executive Chef Victor Franco is the culinary mastermind behind the acclaimed waterfront dining experience at Oceans 234. Franco crafts Floribbean cuisine with a focus on fresh, local seafood to complement the unique beachfront dining at Oceans 234 and to celebrate the breezy South Florida lifestyle. With a commitment to delivering excellence and education to guests, Franco has garnered a reputation as an authority on true South Florida cuisine.

Born and raised in South Florida, Franco developed a passion for cooking in his mother’s kitchen, and he later studied culinary arts at the Art Institute of Fort Lauderdale. He worked alongside some of South Florida’s most renowned chefs, including Mark Militello, Norman Van Aken and Allen Susser. In addition, Franco apprenticed in Maryland as a pastry chef for two and a half years before returning home to work at Chops Lobster Bar and Bova Prime.

Franco joined the team at Oceans 234 in 2010 as an assistant sous chef and impressively moved up the line to executive chef within months. Driven by his love of the ocean and the beach, Franco uses only the freshest seafood and sources the best meats and produce from local purveyors, receiving daily deliveries of fresh goods to use in his seasonally influenced dishes. His favorite specialty menu items include the Local Caught Snapper, Pistachio Mahi Mahi and Mascarpone Lobster Mac & Cheese.
